Sloppy Veg-Head Joe Vegetarian Recipes

  • 1 tablespoon vegetable oil
  • 1 red, green or yellow bell pepper, seeded and chopped

What do comedienne and talk show host Ellen DeGeneres, singer Alanis Morissette, and ultramarathoner Scott Jurek have in common? They’re all vegans, counting themselves among the estimated 1.4% of Americans who have committed themselves to a diet that excludes meat, poultry, fish and seafood, dairy products, and eggs.1 A survey conducted by the Vegetarian Resource Group, a Maryland-based nonprofit organization dedicated to educating the public on vegetarianism, found that only about one half as many people call themselves vegans as do those who refer to themselves as vegetarians.

But by all indications, interest in vegetarianism, of which veganism is a part, is growing. It may increase even more with the release of the 2010 U.S. Dietary Guidelines, which for the first time may be placing a major emphasis on the importance of consuming a plant-based diet.

Like all mammals, cows only produce milk to feed their babies. In order to get the highest milk yield, farmers artificially inseminate their cows every year. After a pregnancy that lasts 9 months, the cow gives birth. Her calf is taken away from her shortly afterwards, generally at around just 12-24 hours after the birth, and sometimes even sooner. This causes great distress to boh the calf and the mother. Just like humans and many other mammals, cows have a strong bond between mother and baby. When her calf is taken away from her, a mother cow will bellow, sometimes for days, for the calf she will never see again. Instead of nourishing her baby, her milk will be extracted by a milking machine and sold.

What you need:

  • 3 Tbsp.Extra Virgin Olive Oil
  • 2 large carrots, peeled and chopped
  • 1 small sweet onion, chopped

  • 1 26-ounce jar of your favorite pasta marinara sauce
    Check the label on the sauce, make sure it has clean ingredients
  • 1 32 ounce box of vegetable stock
  • 15-ounce can great northern white beans, drained and rinsed
  • 1/2 tsp dried red pepper flakes
  • 3/4 cup of any whole grain pasta shape.

All I had around was a few sheets of leftover Whole Wheat lasagna noodles, so I just broke that up in small pieces. Use any shape you want.

  • 1/4 cup very finely chopped red bell pepper
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • Fresh black pepper
  • 1 1/2 cups panko breadcrumbs, plus extra for dredging\
  • 1 finely chopped nori sheet or 1 tablespoon kelp granules (optional, if you like a little fishiness)
  • Oil for panfrying
