Raw Orange Chocolate “Cheesecake”

Crust:

  • 1 C Almonds*
  • 1/4 C Cacao Powder
  • 3 Dates

Combine all ingredients in the food processor. Process until ground fine. Mixture should hold together when pressed. If it doesn’t, add water, 1 T at a time until texture is achieved. Set aside 1/4 C. Press remaining into bottom of 6″ spring form pan. Place in refrigerator.

*I always pre-soak all my almonds and dry them as soon as I get them.

Filling:

  • 3 Oranges (make sure you have very good oranges)
  • 2/3 C Agave
  • 2 1/2 C Cashews (soaked at least 3 hours)
  • 3/4 C Coconut Butter
  • 1/2 t. Sweet Orange Essential Oil (optional as it is not raw but still very healthy)

Peach Upside-Down Cake

Dry ingredients:

  • 1 1/2 cups unbleached white flour
  • 2 teaspoons baking powder
  • 1/2 tsp ginger
  • 1/2 cup natural sugar (I used demerara for all the sugar in this recipe)
  • 1/8 teaspoon salt

Liquid ingredients:

  • 1 cup vanilla soy milk mixed with 1 teaspoon lemon juice
  • 1/2 tsp vanilla extract
  • 1 teaspoon lemon zest (or 1/4 teaspoon lemon extract)
  • 4 cups peeled and sliced peaches
  • 2 tablespoons natural, raw or brown sugar
  • 1/4 cup natural, raw or brown sugar
  • 2 tablespoons water

Chocolate Covered Cherry Pudding Cake

Ingredients:

  • 20 frozen pitted cherries (about 1 cup)
  • 1 teaspoon sugar
  • 1/4 teaspoon rum extract (optional)
  • 1/3 cup brown sugar
  • 2 tablespoons cocoa
  • 1 teaspoon cornstarch
  • 1/2 cup unbleached flour
  • 1/8 teaspoon salt
  • 1/3 cup sugar
  • 1 1/2 tablespoons cocoa
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 tablespoons soy yogurt
  • 1/4 cup vanilla soymilk (or other non-dairy milk)
  • boiling water

Chocolate Tofu Pie

Ingredients

  • 1 12 oz block of soft tofu
  • 1 12 oz back of chocolate chips
  • 1 tablespoon butter
  • 1 1/2 teaspoon vanilla extract
  • 2 egg whites
  • 1/4 cup white sugar
  • 1 prepared chocolate cookie crust
  • 1 chocolate bar to shave over top (optional  & I only had expensive chocolate so it’s a bit sparse!)

Tiramisu Sandwich Cookies

makes about 2 dozen

Cookies:

  • 1 cup maple sugar, or granulated organic sugar

  • 1/3 cup coconut oil

  • 1/4 cup Earth Balance vegan buttery spread at room temperature

  • 1/2 cup soft silken tofu pureed

  • 1 Tbsp pure vanilla extract

  • 2 tsp coffee extract

  • 1 Tbsp kahlua

  • 1/2 cup agave nectar
    2 Tbsp ground good quality coffee
    2 1/2 cups whole wheat pastry flour

  • 1 Tbsp baking powder

  • 1 tsp sea salt

Filling:

  • 1 8oz pkg vegan cream cheese

  • 1 Tbsp pure vanilla extract

  • 2 tsp coffee extract

  • 2 tsp kahlua

  • 1/4 cup agave nectar

  • 1/4 cup cocoa powder

  • 2 Tbsp maple sugar

Vegan Strawberry Shortcake

Strawberry shortcake is a famous American tradition. We are glad that it’s so easy to have a vegan version.

Vegan Strawberry Shortcake

Ingredients:

  • 2 cups all purpose flour

  • 1 Tbs. baking powder

  • 1/2 tsp. salt

  • 4 Tbs. cold vegan margarine, cut into small pieces

  • 2 Tbs. sugar

  • 3/4 cup cold soy milk or soy cream

  • 1 pint strawberries

  • 1 Tbs. sugar

  • Soyato or other vegan whipping cream

  • 1/2 teaspoon baking soda

  • 1/3 cup walnuts (optional), chopped

  • 1/4 cup raisins (optional)

for the frosting:

  • 1/2 cup vegan margarine, room temperature

  • 2 cups powdered sugar

  • 2 lemons, juiced

Vegan Chesapeake Tempeh Cakes

INGREDIENTS

For the Cakes:

  • 8 ounces tempeh (use the nori tempeh if you can find it, but plain soy tempeh is fine, too)
  • 1 cup water
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 3 tablespoons Vegenaise
  • 1 tablespoon whole-grain mustard (stone-ground Dijon works, too)
  • 1 tablespoon hot sauce
  • 1 tablespoon red wine vinegar
  • 1/4 cup very finely chopped red bell pepper
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • Fresh black pepper
  • 1 1/2 cups panko breadcrumbs, plus extra for dredging\
  • 1 finely chopped nori sheet or 1 tablespoon kelp granules (optional, if you like a little fishiness)
  • Oil for panfrying

For the Remoulade:

  • 2 tablespoons Vegenaise
  • 1 tablespoon whole-grain mustard (stone-ground Dijon works, too)
  • 1 tablespoon hot sauce
  • 2 teaspoons capers (try not to get too much brine)

Vegan Red Velvet Cake with Buttercream Frosting

INGREDIENTS

For Cake Batter:

  • 3 1/2 cups (440 g) unbleached all-purpose or whole-wheat pastry flour
  • 1 1/2 cups (300 g) granulated sugar
  • 2 teaspoons (9 g) baking soda
  • 1 teaspoon (6 g) salt
  • 2 teaspoons (9 g) cocoa powder
  • 2 cups (470 ml) nondairy milk (soy, rice, almond, hazelnut, hemp, or oat)
  • 2/3 cup (155 ml) canola oil
  • 3 tablespoons (45 ml) red food coloring
  • 2 tablespoons (30 ml) distilled white vinegar
  • 2 teaspoons (10 ml) vanilla extract
  • Ground pecans, for topping (optional)

For Buttercream Frosting:

  • 1/2 cup (112 g) nondairy, nonhydrogenated butter (such as Earth Balance), at room temperature
  • 3 cups (300 g) confectioners' sugar
  • 1 1/2 teaspoons (8 ml) vanilla extract
  • 2 tablespoons (30 ml) nondairy milk (soy, rice, almond, hazelnut, hemp, or oat) or water
  • Assorted food colors (optional)

Chocolate Chip Cupcakes

I don’t eat eggs, so this cupcake recipe is perfect for my diet. One of my best friends made these for me and they instantly became a favorite. These come out so moist it’s unbelievable. Make sure to use mini cupcake pans.

  • 1 1/2 c flour
  • 1/2 c sugar
  • 1/4 c unsweet cocoa
  • 1 t baking soda
  • 1/2 tsp salt
  • 1/2 c orange juice
  • 1/3 c water
  • 3 T vegetable oil
  • 1 T vinegar
  • 1 tsp vanilla
  • 1/3 c semisweet chocolate mini morsels
