Raw Orange Chocolate “Cheesecake”

Crust:

  • 1 C Almonds*
  • 1/4 C Cacao Powder
  • 3 Dates

Combine all ingredients in the food processor. Process until ground fine. Mixture should hold together when pressed. If it doesn’t, add water, 1 T at a time until texture is achieved. Set aside 1/4 C. Press remaining into bottom of 6″ spring form pan. Place in refrigerator.

*I always pre-soak all my almonds and dry them as soon as I get them.

Filling:

  • 3 Oranges (make sure you have very good oranges)
  • 2/3 C Agave
  • 2 1/2 C Cashews (soaked at least 3 hours)
  • 3/4 C Coconut Butter
  • 1/2 t. Sweet Orange Essential Oil (optional as it is not raw but still very healthy)

Peach Upside-Down Cake

Dry ingredients:

  • 1 1/2 cups unbleached white flour
  • 2 teaspoons baking powder
  • 1/2 tsp ginger
  • 1/2 cup natural sugar (I used demerara for all the sugar in this recipe)
  • 1/8 teaspoon salt

Liquid ingredients:

  • 1 cup vanilla soy milk mixed with 1 teaspoon lemon juice
  • 1/2 tsp vanilla extract
  • 1 teaspoon lemon zest (or 1/4 teaspoon lemon extract)
  • 4 cups peeled and sliced peaches
  • 2 tablespoons natural, raw or brown sugar
  • 1/4 cup natural, raw or brown sugar
  • 2 tablespoons water

Vegetarian Sloppy Joes

You'll love this vegetarian version of sloppy joes with mushroom, peppers and onions. It's satisfying and healthy at the same time.

Recipe:

  • 1 pound portabella mushroom caps
  • 4 Garlic Cloves
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 small onion
  • 1/2 med red pepper
  • 1/2 med green pepper
  • 1 8oz can tomato sauce
  • 3 tbs light brown sugar
  • 1 tbs red wine vinegar
  • 2 tbs Worcestershire sauce
  • 2 tbs tomato paste
  • 1 tsp Fresh Thyme leaves

1/4 tsp red pepper flakes

Directions:

  • Chop Mushrooms into small piece and add to a pot on med heat which is sprayed with cooking spray and let cook for 5-7min
  • Add Garlic, Onion, Peppers and season with salt and pepper, cook 5-7min.
  • Make sauce by adding Tomato Sauce, Brown Sugar, Vinegar and Worcestershire to a bowl and mixing together.
  • Add Tomato Paste to veggies and let cook 1-2 min.
  • Add sauce as let cook and thicken for 2 min.
  • Add Thyme and Red pepper flakes.
  • Serve on a bun with chopped pickles.

Coconut – Chocolate Truffle Ice Cream

Ingredients:

(makes 4 small servings…anything smaller than an overflowing bowl is ‘small’ where ice cream is concerned)

  • 1 cup coconut milk (canned stuff will do the trick)
  • 2/3 cup half and half (the original recipe calls for heavy cream, but I like to keep it light wherever I can)
  • 1/4 cup raw cane sugar
  • shavings from 2 chocolate truffles

  • 6 cups 1″ cubed stale bread (about 1 lb)
  • 1 cup chocolate chips
  • 3 ripe bananas, sliced ½” thick
  • 2-2¼ cups rice milk, almond milk or soy

  • ½ cup maple syrup

Spinach, Sweet Onion, and Feta Pie

What do we need:

  • 2 TB olive oil

  • 2 medium sweet Vidalia onions, diced (~3 c)

  • 3-6 cloves garlic, crushed or minced (you can use more or less depending on taste)

  • 1 ¼ lb wilted spinach (once the water is removed this will be ~3 c)

  • ½ tsp pepper

  • ¼ tsp salt

  • 3 large eggs (or 2 eggs and 2 egg whites)

  • ¼  lb (4 oz) feta, crumbled

  • 10 (14”X9”) sheets phyllo dough, thawed in the refrigerator overnight

  • Cooking spray

Vegetarian Chili

Ingredients:

  • 1  tablespoon vegetable oil

  • 1  large onion, chopped (1 cup)

  • 1  medium green bell pepper, chopped (1 cup)

  • 4  cloves garlic, finely chopped

  • 2  medium jalapeƱo or serrano chiles, seeded, finely chopped

  • 2  cans (15 oz each) ) Progresso® black beans, drained, rinsed

  • 2  cans (14.5 oz each) Muir Glen® organic fire roasted or plain diced tomatoes, undrained

  • 1 1/2  cups water

  • 1  tablespoon chili powder

  • 1  teaspoon ground cumin

  • 6 roma (plum) tomatoes, chopped

  • 1/2 cup sun-dried tomatoes, packed in oil

  • 3 cloves minced garlic

Stuffed Acorn Squash

Ingredients

  • 2 acorn squash
  • 1 can crushed pineapple drained
  • 1/2 cup both cranberries and chopped walnuts
  • 4 tablespoons of chopped dried apricots
  • A small amount of butter or vegan spread for each half
  • Cinnamon, nutmeg, cardamom to taste

Directions

  • Gently prick each acorn squash in 2-3 spots and microwave them for 4 minutes to soften
  • Cut them in half and scoop out seeds, place face down in a baking dish with 1/2 inch of water and bake at 350 for 30 minutes
  • While that is baking mix together the rest of the ingredients and let them sit
  • After baking the squash, remove from oven, drain the water, turn over the squash
  • Rub a little butter or spread on each piece and then add 1/4 of the stuffing to each half
  • Top with a little additional cinnamon and return to the oven for 20 more minutes

Bruschetta with Tomato and Basil

Ingredients:

  • 6 or 7 ripe plum tomatoes (about 1 1/2 lbs)
  • 2 cloves garlic, minced
  • 1 Tbsp extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 6-8 fresh basil leaves, chopped.
  • Salt and freshly ground black pepper to taste
  • 1 baguette French bread or similar Italian bread
  • 1/4 cup olive oil
