Veggie Pot Pie

Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 8 ounces mushrooms
  • 1 clove garlic, minced
  • 2 large carrots, diced
  • 2 potatoes, peeled and diced
  • 2 stalks celery, sliced 1/4 inch wide
  • 2 cups cauliflower florets
  • 1 cup fresh green beans, trimmed and snapped into 1/2 inch pieces
  • 3 cups vegetable broth
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce

Asparagus and Chickpea Casserole

To make this gluten-free, substitute 1 tablespoon cornstarch or potato starch for the flour.

  • 1 medium onion, diced
  • 1 rib celery, diced
  • 8 ounces sliced mushrooms
  • 3 cloves garlic, minced
  • 12 ounces asparagus, ends trimmed and stalks cut into 1-inch pieces
  • 2 tablespoons vegetable broth or “no-chicken” broth
  • 2 tablespoons flour
  • 1 cup vegetable broth or “no-chicken” broth
  • 3/4 cup unsweetened soymilk or other non-dairy milk
  • salt and freshly ground black pepper to taste
  • 1 1/2 tablespoon nutritional yeast
  • 1/2 teaspoon dried thyme leaves

  • 1 15-ounce can chickpeas, rinsed and drained

Vegetarian Chili

Ingredients

  • 2 tablespoons canola oil
  • 1 1/2 cups chopped yellow onions
  • 1 cup chopped red bell peppers
  • 2 tablespoons minced garlic
  • 2 to 3 serrano peppers, stemmed, seeded, and minced, depending upon taste
  • 1 medium zucchini, stem ends trimmed and cut into small dice
  • 2 cups fresh corn kernels (about 3 ears)
  • 1 1/2 pounds portobello mushrooms (about 5 large), stemmed, wiped clean and cubed
  • 2 tablespoons chili powder
  • 1 tablespooon ground cumin
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon cayenne
  • 4 large tomatoes, peeled, seeded and chopped
  • 3 cups cooked black beans, or canned beans, rinsed and drained
  • 1 (15-ounce) can tomato sauce
  • 1 cup vegetable stock, or water
  • 1/4 cup chopped fresh cilantro leaves
  • Cooked brown rice, accompaniment
  • Sour cream or strained plain yogurt, garnish

Aloo Mattar (Potatoes and Green Peas)

This is a popular north Indian dish. Potatoes and peas with spicy gravy makes a great main dish.

Recipe will serve 3 to 4.

Ingredients

  • 3 medium boiled potatoes

  • 3/4 cup frozen green peas

  • 2 tablespoons oil

  • 1 teaspoon cumin seeds (jeera)

  • 1/8 teaspoon asafetida (hing)

  • 1 teaspoon ginger paste

  • 1 minced green chili

  • 2 tablespoons coriander (dhania)

  • 1 teaspoon fennel seed powder

  • 1/4 teaspoon turmeric

  • 1 teaspoon paprika (dagi mirch)

  • 1 teaspoon salt adjust to taste

  • 1 teaspoon mango powder amchoor

  • 1/2 teaspoon garam masala

  • 2 medium tomatoes sliced

Spicy Tomato Soup with Wilted Greens

What you need:

  • 3 Tbsp.Extra Virgin Olive Oil
  • 2 large carrots, peeled and chopped
  • 1 small sweet onion, chopped
  • 3 cloves garlic, finely minced
  • 1 26-ounce jar of your favorite pasta marinara sauce
    Check the label on the sauce, make sure it has clean ingredients
  • 1 32 ounce box of vegetable stock
  • 15-ounce can great northern white beans, drained and rinsed
  • 1/2 tsp dried red pepper flakes
  • 3/4 cup of any whole grain pasta shape.

All I had around was a few sheets of leftover Whole Wheat lasagna noodles, so I just broke that up in small pieces. Use any shape you want.

  • a couple huge handfuls of spinach
  • few pinches of sea salt
  • few pinches pepper
  • lots of fresh parsley for garnish

  • 1 - 26.5oz can Black Beans, drained & rinsed (105 cal/0.5 cup)
  • 2 - 14.5oz cans Petite Diced Tomatos (25 cal/0.5 cup)
  • 1 - 6oz can Tomato Paste (30 cal/1.2oz)
  • 1 - 15.25oz can Whole Kernel Sweet Yellow Corn, drained (60 cal/0.5 cup)
  • 1 - large onion, chopped (57 cal/ total)
  • 3 - cups water
  • 3 - Tbsp Chili Powder
  • 1 - Tbsp Salt
  • 1 - Tbsp Garlic Powder

Hawaiian Baked Beans

Ingredients:

  • 2 teaspoons olive oil

  • 1/8 teaspoons crushed red pepper

  • 4 cloves garlic, minced

  • 1 stalk celery, sliced

Great Green Beans

Ingredients
  • 2 lbs of fresh green beans (serves 4)

  • 1 onion chopped finely

  • 1 Tablespoon butter

  • salt

  • pepper

  • nutmeg

Directions
  1. image Cut the tips off both ends of the grean beans and rinse them thoroughly.

  2. Bring enough water to a boil in a large pot such that you could cover the green beans. Boil the green beans until they are al dente, which usually takes around ten minutes of cooking. Drain into a colander, and rinse under cold tap water.

  3. In a large pot, melt the butter over medium heat. Add the onion and stir for a minute or two until the onion begins to become transparent. Add the green beans back into the pot.

  4. Season with salt, pepper and nutmeg to taste, stir once or twice and let it simmer uncovered for 10 more minutes.

  5. Serve hot and enjoy!

Cook’s Notes
  • Did you know? Rinsing the green beans under cold water immediately after boiling makes them keep their nice green color? Yumm!

Edamame: Planet Friendly Protein, Tasty and Nutrious

Edamame (eh-dah-mah-may) is a tasty snack food from Asia that has become a popular appetizer at Japanese restaurants here in the west. Often called green vegetable soybeans, they are a special variety harvested when still immature and green.
